Whilst we are missing everybody and can’t be together in the Howard Centre, we are delighted to share with you some recipes from our wonderful Well Cafe volunteers. Today’s soup recipe is from Barbara: SPICY CHICKPEA & COCONUT SOUP little cooking oil 2 med/lrge onions 1 red pepper 1 tsp curry powder pinch chilli flakes 3 tins chickpeas 1 ltr chicken stock half block creamed coconut black pepper METHOD Saute onions and red pepper in a little oil until soft Add curry powder and chilli flakes and cook for a few minutes Add chickpeas and stock and simmer for about 15mins.
